French Tomato Soup

French Tomato Soup

Ingredients

8 medium tomatoes chopped

1 onion chopped

1 stick of celery chopped

2 small carrots grated

2 cloves of garlic crushed

fresh or dried thyme

1 tablespoon of olive oil

100g grated parmesan

sea salt and freshly ground black pepper

basil to garnish

 

 

Method

Heat the olive oil in a large saucepan, add the onion and celery, fry gently until softened.

add the garlic and cook for another minute

add the tomatoes, carrots, thyme and 300ml water, bring to the boil

simmer gently for 15 minutes

add salt and pepper and simmer for a further 5 minutes

Allow to cool slightly and blend

garnish of basil and serve with a small side bowl of grated parmesan

Cooks Tips

This lovely french tomato soup can be further enriched by adding a few chopped sun dried tomatoes before blending.  For those who like a spicy tomatoe soup add a good pinch of chilli powder at the same stage as the seasoning.  Finally for those who like a creamy tomato soup add a swirl of cream just before serving.
