French Onion Soup
Ingredients (Serves 4) 700g Onions (peeled and thinly sliced) 25g (1oz) Butter 15ml (1 tablespoon) Oil 5ml (1 teaspoon) Brown Sugar 15ml (1 tablespoon) Plain Flour 1.2 litres of Beef Stock 15ml (1 tablespoon) Worcestershire Sauce 30ml (2 tablespoons) Sherry or Brandy Croutons 8 thick slices of French Bread 15ml (1 tablespoon) Course-grained Mustard 75g (3oz) grated Gruyere Cheese Salt, freshly milled Black Pepper and freshly chopped Parsley to garnish
Method
A quick and easy and extremely tasty French Onion Soup. Heat the butter and oil in a large saucepan, add the onions and brown sugar. Cook gently, stirring occasionally, until the onions star to go golden brown. This will take about 20 minutes. Add the flour and cook for another couple of minutes, pour in the beef stock, sherry, Worcestershire sauce, and seasoning, cover and simmer gently for a further 30 minutes. Just prior to serving preheat the grill and lightly toast the slices of bread on both sides. Spread one side with the course-grained mustard (or butter if desired) top with cheese and grill until golden and bubbling. Ladle the soup into bowls, add 2 slices of the cheese topped toast, garnish with freshly chopped parsley (optional) and serve immediately.
Cooks Tips Make sure the onion soup is served piping hot. For those who don't like course-grained mustard, but would like to add a little kick to this wonderful french onion soup add 1-2 cloves of crushed Garlic to the butter before spreading on the slices of bread. |
