 French Bean Soup Recipe

Ingredients

1lb French beans (topped, tailed and diced)
1lb Potatoes (peeled and diced)
1 medium onion (finely chopped)
8oz Thickly sliced smoked bacon (chopped)
1 clove Garlic (chopped)
2 tablespoons of olive oil
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
2 tablespoons double cream
Salt and pepper to season

Method

Heat the oil in a large pan, add the garlic, onion and bacon – fry gently for 5 minutes
Add the beans, potatoes, rosemary, thyme and 1 ½ pints of water
Simmer for 1 hour
Season with salt and pepper
Add cream just before serving

 

Cooks Tips

This version of French Bean Soup is made with sliced smoked bacon which is easier and quicker without compromising on the taste, however, this can be replace with a bacon hock for the more traditional recipe.
