Ingredients

1lb (450g) garlic sausage

1/4 cup oil

1 onion, finely chopped

1 clove garlic, finely chopped

3 medium potatoes, peeled & sliced (1/4" thick)

6 cup chicken stock

1 tin tomatoes, drained & chopped

1 (1lb (450g)) tin white beans, rinsed in cold water & drained

8oz (225g) Kale or spinach tough center stems taken out

Salt & pepper to taste

Method

Prick sausage several times, place in saucepan, cover with water; bring to a boil and simmer uncovered 15 minutes.

Drain and slice.

Heat oil in a heavy pan and saute onion and garlic until tender but not browned.

Add potatoes and cook, stirring 3 minutes.

Pour in broth, bring to a boil; cover and cook 20 minutes.

Add the Kale and cook until wilted about 5 minutes.

Add reserve sausage slices and reheat.

Add salt and pepper to season.
