Ingredients

1 tin red kidney beans

5 pints water

1lb (450g) kale, chopped

6 medium size potatoes, cubed

2 fresh tomatoes, cut into quarters

1 onion, whole

8oz (225g) linguica, cut into 1/2 inch slices

2 tbsp vegetable oil

1 tbsp salt of taste

1 tsp pepper, coarsley ground

1 tbsp fennel (tuncho), chopped

Method

Strain beans through food mill and add to water.

Place in a 4 to 6 quart pan and bring to a boil.

Chop kale into small pieces and add to water.

Add cubed potatoes, onion, Crisco, tomato and linguica, and allow to boil for about 25 minutes, before you shut off heat.

Add fennel.
