Recipe for Portuguese Smoked Sausage And Kale Soup Recipe

Ingredients

1lb (450g) kale

1lb (450g) potatoes

1lb (450g) smoked sausage (Linguinca, chorizo or sweet Italian)

1 cup chopped onion

1/2 cup chopped carrots

2 tsp chopped garlic

2 tbsp olive oil

2 qts. chicken stock or combination of chicken and beef

3 lbs. chipped tomatoes

1 1/2 cup cooked kidney beans

Method

Strip leaves from Kale and cut diagonally into wide slices.

Either mash potatoes against side of pot or puree with broth.

Add remaining ingredients and cook until done.
