Recipe for Portuguese Red Bean Soup Recipe

Ingredients

2 cup red beans

1 small onion

1 clove garlic, chopped

2 potatoes, cut into cubes

salt and pepper to season

1/4 tsp paprika

1 tbsp parsley, chopped

1/4 tsp cayenne pepper

1 tin tomato sauce

1 tbsp oil

4 pints water

2 tbsp lemon juice

1 small cabbage, chopped

1/2 cup macaroni

2 1b. smoked sausage

Method

Cook beans in water until tender.

Saute the onion and garlic in oil.

Add to the beans together with the potato, salt, pepper, paprika, parsley, cayenne pepper and tomato sauce.

Bring to the boil, reduced the heat and simmer for 15 minutes.

Pour in the water and lemon juice and bring to the boil.

Mix in the last of the ingredients and cook for a further 15-20 minutes.

Serve with crusty bread.
