Portuguese Portugese Smoked Sausage And Kale Soup Recipe
Ingredients 1 tbsp olive oil 8oz (225g) smoked sausage, sliced 1/2 inch thick 2 pints chicken stock 1 medium onion, finely sliced 3 medium potatoes, sliced (peeled or unpeeled) 1lb (450g) Kale, finely shredded salt and pepper to season Method Heat oil, saute the sausage just until the fat is rendered (3 to 5 minutes). Drain on paper towel and reserve. Bring broth to a boil with onions and potatoes and simmer 10 to 15 minutes until potatoes tender. Mash the onions and potatoes in broth with potato masher. Add drained sausage and Kale. Bring to a boil and simmer until kale tender. Taste for seasoning. Serve piping hot with crusty bread, beer or red wine. Cooks Comments and Tips . |
