Recipe for Portuguese Portugese Kale And Linguica Soup Recipe

Ingredients

1 large beef soup bone

5 pints beef stock

1lb (450g) linguica or kielbasa sausage, sliced

8oz (225g) chorizo sausage, sliced

2 bunches fresh kale, about 1 8oz (225g) or 2 (10 oz.) pkts chopped frozen kale

4 cup diced, peeled potatoes

1/4 tsp red pepper flakes

1 tbsp red wine vinegar

salt and pepper to season

Method

Combine drained, soaked beans, bone and beef stock in a large pot, cover and bring to a boil.

Reduce heat and gently simmer one hour.

Add slices sausage and kale, cover and simmer one hour.

Add potatoes and seasoning

Cover and simmer for another hour.
