Ingredients

1 cup baby lima beans, soaked overnight

1 large onion, diced

2 cup potato chunks

1lb (450g) chorico (Portuguese sausage Kielbasa or pepperoni will do)

1/2 bunch kale, chopped

1 tsp salt

1/2 tsp pepper

10 cup water

Method

Combine all in a large pot

Bring to a boil.

Reduce the heat and simmer for up to 3 hours until beans are tender.
