Portuguese Portugese Bean And Sausage Soup Recipe
Ingredients 2 cups dried beans 4 ham hocks 14 cup water 1 clove garlic, crushed 1 large onion, diced 2 stalks celery, sliced 4 Portguese sausages, cut into 1 inch lengths (or substitute any of smoked sausages) 1 tbsp oil 2 large tins tomatoes, chopped 1/2 cup macaroni 1 small cabbage, coarsely sliced Method Wash beans and soak overnight. Simmer beans with ham hocks and water forabout 2 hours or until beans are soft. Saute garlic, onions, celery and sausage in oil. Add 1 cup of the chopped tomatoes. Stir, and when simmering add to beans and the rest of the crushed tomatoes and simmer 15 minutes. Add cabbage, macaroni, salt and pepper to season and simmer 16 minutes. Add liquid smoke to taste.
