Recipe for Portuguese Hearty Portugese Soup Recipe

Ingredients

2 cup chopped onions

6 cloves garlic, chopped

6 tbsp oil

1lb (450g) garlic flavored smoked sausages, cut up

10 cup beef stock

1 tin kidney beans with liquid

1 head green cabbage, cored and chopped into medium pieces

12 small new potatoes, scrubbed and quartered

1/4 cup vinegar

2 cup ketchup

Salt and pepper to season

Method

Saute onions and garlic in the oil.

When they are just transparent, add sausage slices and brown lightly.

Add beef stock and all other ingredients.

Bring to boil, stirring often to keep bottom of pan from burning.

Reduce heat, and simmer 35 to 45 minutes or longer, stirring occasionally.

Season to taste.

Flavor is best when kept refrigerated a few days and reheated.

Will keep up to one week in the refrigerator.
