Portuguese Black Bean Soup Recipe
Ingredients 1 1/2 cup black beans 6 cup cold water 3/4 tsp salt 2 tsp cider vinegar 3/4 cup chopped onion 1 medium green pepper, diced 1/2 cup chopped celery 1 medium potato, diced 1 linguinica sausage, chopped 8oz (225g) tomato paste 3 cloves garlic, crushed 2 cup water 3 beef stock cubes 3/4 tsp cumin 1/2 tsp pepper pinch of cayenne pepper Method In a large pan mix the beans, cold water, salt and vinegar. Bring to boil, lower heat and simmer uncovered for about 50 minutes. Introduce all the remaining ingredients and bring to boil. Now reduce the heat and simmer (covered)for approximately 1 hour until beans are soft. Cooks Comments and Tips . |
