Portuguese Chicken Casserole Recipe
Ingredients 2lb 8oz (1.1kg) chicken, cut and skinned 1/2 clove garlic, crushed Salt & pepper to taste Paprika to taste 1 cup orange juice 1/2 cup tomato puree 2 tbsp soy sauce 2 tsp prepared mustard 1 medium green pepper, chopped 2 small oranges, peeled & sectioned Method Rub chicken with garlic and sprinkle with salt and pepper. Put in casserole. Mix orange juice, puree, soy sauce, and mustard. Add green pepper and pour over chicken. Cover and bake in 350 degree oven for 50 minutes or until tender. Add oranges. Bake 5 to 10 minutes longer until oranges are heated through. Cooks Comments and Tips . |
