Recipe for Portuguese Pickled Pork Recipe

Ingredients

3lb (1.35kg) boneless pork loin roast

1 1/2 cup water

1 cup cider vinegar

1 tsp hot chilli powder

3 garlic cloves, crushed

1 tsp salt

Method

Place pork in large thick plastic bag.

Make a marinade with the remaining ingredients.

Pour the marinade into bag.

Remove any air and seal the bag.

Place in a dish and refrigerate overnight, turning two or three times.

Take the pork from bag, place it on a rack in shallow roasting pan and cover with the remaining marinade.

Roast in a preheated oven at 325 degrees for 2 hours.

Leave to rest for 20 minutes before carving.
