Recipe for Portuguese Drunken Pig Recipe

Ingredients

4lb (1.8kg) pork roast, lean and boneless

2 cloves garlic, sliced

1 tbsp garlic powder

1 tbsp paprika

salt and pepper to season

1 1/2 cup red wine

Method

Trim the fat from pork.

Cut into 3/4" slices.

Coat each slice on both sides with a mixture of salt, pepper, garlic powder and paprika.

Place the slices shallow baking tray.

Make one or two cuts in the slices and insert a garlic slice in each slit.

Completely cover the meat with red wine..

Leave to marinate for at least 3 hours. Overnight in refrigerator if possilbe.

Transfer to a large pan with a lid.

Bring to a boil and reduce heat.

Cover and simmer until liquid is reduced to about 1/3.

Turn the pork a couple of times whilst cooking.

Serve the slices of pork on a platter and pour over the reside sauce.
