Portuguese Cinnamon Roast Recipe
Ingredients 5lb (2.2kg) chuck roast 2 tbsp ground cinnamon 4 cup water 6 large onions, quartered 8 carrots, cut in large slices 1 (28oz (225g)) tin Italian tomatoes 3-4 cloves garlic, crushed 1 cup cider vinegar salt and pepper to season 8 potatoes, halved 1lb (450g) Chorico sausage 1 small tin tomato paste + 2 tins water Method Marinate roast in cinnamon, garlic, vinegar and water overnight. Then simmer roast in the marinade for 1/2 hour on low heat. Transfer meat to roasting pan. Add potatoes, onions, carrots, and sausage along with marinade. Then add the tomatoes, tomato paste and water to the roasting pan also and cover. Cook in the oven at 350 degrees for about 3-4 hours. Cooks Comments and Tips . |
