Recipe for Ligias Portuguese Roast Beef Recipe

Ingredients

4lb (1.8kg) roast beef

8 small potatoes

1 tsp garlic salt

1 tsp ground black pepper

1 tsp salt

1 cup red or white wine

1 onion, sliced

Parsley, to taste

1 bay leaf

6 whole cloves

6 whole pepper

1 cinnamon stick

1 tsp paprika

4oz (113g) butter

Method

Make a marinating sauce with the wine, garlic salt, pepper (ground) and salt.

Place meat in this sauce for 3-4 hours.

Place meat in roast pan with whole potatoes, cover meat with 1 block of margarine.

Roast until brown.

Remove potatoes and add slices of onion and the rest of the spices.

Pour marinate sauce over meat.

Add 1-2 cups of water if needed.

salt to season.

When meat is almost done place potatoes back into pan and cook until potatoes and meat are done.
