Recipe for Alcatra Portuguese Roast Beef Recipe

Ingredients

5lb (2.2kg) rump beef

2 pints beer

water

2 onions, finely chopped

5 garlic cloves, crushed

12 whole allspice berries

2 cinnamon sticks

2 bay leaves

salt & pepper to taste

Method

Place beef in a roasting pan.

Cover beef with the remaining ingredients

The beef should be completely covered, with the marinade, add water if necessary.

Refrigerate overnight, turning ocasionally.

Marinade longer for a stronger flavor.

Preheat the oven to 475 degrees and cook until liquid boils.

Reduce the heat to 400 degrees, cover and cook for three to four hours.

Top up with beer if necessary.

The beef should be a rich brown and suculent when done with a thick gravy.
