Recipe for Bicalou Portuguese Cod Fish Gourmet Recipe

Ingredients

2 lb salted dry cod fish

6 potatoes

6 eggs

2 onions

garlic

1 tbsp vinegar

1 tbsp parsley (finely chopped)

1 tin chopped green peppers

oil

olives (optional)

Method

Soak overnight or day time.

Pour off water frequently and add fresh water each time.

Salt should be removed.

Boil with fresh water and when it comes to a boil, throw water out and repeat about 3 times.

Remove all bones GOOD.

Flake the fish.

Boil potatoes and eggs.

Oil the bottom of a casserole dish and line with sliced rounded potatoes.

Then sprinkle flaked cod fish over potatoes and then add sliced eggs on top.

Saute onions sliced round, garlic, vinegar, parsley and green peppers (Ortega).

When its all cooked spread it over the eggs.

Olives tin be added, optional

Add a little oil and bake about 1 hour at 350 degrees, until its all bubbly.
