Recipe for Portuguese Sherry Cake Recipe

Ingredients

1 (2 layer) pkt cake mix

1 instant vanilla pudding mix

4 eggs

3/4 cup butter flavored cooking oil

3/4 cup cream sherry

1 tsp butter flavor

2 tsp ground nutmeg

1/4 cup granulated sugar

1 tsp cinnamon

Method

Combine cake mix, pudding mix, eggs, oil, sherry, butter flavor and nutmeg.

Blend at low speed, until moist.

Beat at medium speed 2 minutes.

Pour 1/3 batter into well greased and floured 10 inch tube pan.

Combine together 1/4 cup sugar and 1 tsp cinnamon.

Sprinkle 1/2 of cinnamon-sugar mixture over the batter in pan.

Add another 1/3 of batter.

Sprinkle other 1/2 of cinnamon-sugar mixture, then top with remaining 1/3 of batter.

Bake at 350 degrees for 45-50 minutes.

leave to cool 10 minutes.

Place onto wire rack.

Topping: Mix 1 cup sifted icing sugar, 2 tbsps milk, 1/2 tsp vanilla and 1/2 teaspoon butter flavor.

Spoon over warm cake.
