Ingredients

8oz (225g) rice

1 tin evaporated milk

5 eggs

3/4 cup sugar

Method

Boil rice until almost soft.

Drain.

Add fresh water to barely cover rice.

Add evaporated milk.

Simmer over very low heat until done.

Beat 5 eggs with 3/4 cup of sugar.

Stir into rice until all blended.

Simmer a few minutes until rice is firm.

Garnish with orange rinds if desired.

Serves 4-6.
