Portuguese Sweet Bread 4 Recipe
Ingredients 1 1/2 cup milk, scalded (82°C/180°F, nearly boiling) then cooled 4oz (113g) butter 1 lemon zest grated zest 2 pkts granulated dry yeast 1/2 cup warm water 10 cup flour 2 1/4 cup sugar 5 medium eggs Method Add butter to milk, allow it to cool, then add lemon zest. In large bowl, mix yeast with warm water. Add flour and sugar and cooled milk mixture. Add eggs and mix well. Knead until mixture leaves sides of bowl. Turn onto a floured board and knead for 10 minutes. Leave to rest for ten minutes and then knead again. Place dough in lightly buttered bowl, cover and leave to double in size, preferably overnight. Punch down. Shape into four or five round bread loaves. Cover and leave to rise for two hours in warm room. Bake at 350 degrees for approximately 35 to 40 minutes, until done.
