Recipe for Portuguese Style Sweetbread Recipe

Ingredients

5lb (2.2kg) flour

2 doz. eggs, room temperature

4 cup sugar

1lb (450g) butter

3 pkts dry yeast

1 tbsp salt

Method

In small bowl, 1/2 cup lukewarm water.

Mix the 3 envelopes of dry yeast with 2 tbsps sugar.

Stir, cover, set aside.

In large pan pour 4 1/2 lb flour make a well in the center of flour.

In a separate bowl, beat eggs, melted margarine, sugar and salt together.

Pour these ingredients into well of flour in large kneading pan.

Work mixture together as in making dough.

Knead dough mixture together remember to scrape sides into dough.

Cover and leave to rise approximately until doubled in volume.

Preheat oven to 350 degrees.

In a small bowl pour the oil, enough to moisten hands.

Make large ball with your hands.

Turn onto a floured surface.

Now divide into dough balls.

Cover and leave in a warm place for a couple of hours to rise.

Put into individual 9" pie dishes.

Brush lightly with melted butter.

Cook until bread is golden brown, about 35-45 mins.
