Portuguese Portugese Sweet Bread 24 Recipe
Ingredients 5lb (2.2kg) Flour 2 1/2lb (900g) sugar 15 eggs 1 qt. milk zest of 1 lemon, grated 8oz (225g) butter 1/2 cup oil 1 tsp salt (level) 1 cup flaky mashed potatoes 1 pocket yeast Method In large pan mix the milk, lemon zest, butter, oil and salt, bring to the boil and then leave to cool. Make the mashed potatoes, leaving it very hard. Add 2 eggs and 2 tbsps sugar. Meanwhile, make up the yeast mixture (yeast, a drop of warm water and 1 tsp sugar). Leave it to stand for about 3 minutes and add it to the mashed potatoes. Leave to stand for 30 minutes to rise. In a large pan put the flour, make a hole in the middle and put there the rest of the eggs, the mashed potatoes and the milk, still lightly warm. Mix all ingredients in the hole and then work the flour into the egg mixture. Leave to rise overnight. Cut in loaves, put them in small pans, greased and floured and let them rise again for 4 hours. Bake for approx. 50-60 minutes in a preheated oven at 350 degrees. Cover with in tin foil after about 15 minutes to protect the top from overcooking. Cooks Comments and Tips . |
