Mama's Portuguese Sweet Bread Recipe
Ingredients 21 cups flour 7 pkt dry yeast 4 cup sugar 2 cup milk 1 1/2 cups warm water 8oz (225g) butter 12 eggs 1 tbsp salt Method In a bowl mix yeast with warm water, add a pinch of sugar. Let rest, it should bubble in 15 to 20 minutes. Sift flour and sugar into large bread pan, leave to warm gently in a warm oven (not hot). Scald milk until tiny bubbles show on side of saucepan or a film forms. Leave to cool and then add butter. Beat eggs in a basin. When milk has cooled add milk to egg. Add yeast and mix. Make a well in flour and sugar mixture, to this add liquid mixture mixing with your hands. Knead the dough. Cover pan, leave to rise in warm place until tripled in size, about 4-5 hours. Make into loaves, placing in greased pans. leave to rise again another 1 1/2 hours or so. Bake in 325 degree oven until done, depending on size of loaves, 30-40 minutes. The loaves will brown quickly so be sure to keep a close eye on them. Cooks Comments and Tips . |
