Portugese Scallops Recipe
Ingredients
1 lb Bay Scallops
2 Garlic cloves, crushed
2 tbsp Olive Oil
1 tbsp Lemon juice
1/4 tsp Cayenne pepper
1 bunch of Coriander, chopped
Method
Heat the oil in a large frying pan, add the scallops and garlic and stir fry
for 3-4 minutes until they begin to colour and have released their juices.
Remove the scallops from the pan and set aside.
Using the same frying pan, add the lemon juice and cayenne and boil with the scallop juices
for a couple of minutes until reduced to a glaze.
Now return the scallops to the pan and on a high heat warm through for 1
minute.
Add the coriander, toss and serve.
Cooks Comments and Tips
Be careful not to over cook the scallops you don't want them to taste rubbery.
