7-layer Mexican Dip Recipe

Recipe for 7-layer Mexican Dip Recipe

Ingredients

1 tin of refried beans

2 ripe avocado, mashed

2 tsp lemon juice

A few drops of Tabasco sauce

1 carton sour cream

1 tbsp taco seasoning

6 spring onions, finely sliced

2 tomatoes, diced and sprinkled with freshly chopped coriander

1/2  lettuce, shredded

8oz grated cheddar cheese

12 ripe black olives, pitted & sliced

Method

Layer the above on a 9" dish.  There is no hard and fast rule as to which layer goes first.  However, here we go with my personal choice :-

1. Spread the refried beans evenly for the first layer.

2. Next layer, mashed avocado mix with lemon juice & Tabasco.

3. Mix the sour cream & taco seasoning for layer three.

4. Fourth layer is spring onion mixed with the tomato & coriander.

5. Layer five is the shredded lettuce.

6. Penultimate layer is the grated cheese.

7. Finally the sliced black olives.

Chill before serving with a generous portion of taco chips.

Cooks Comments and Tip

This 7 layer Mexican  Dip recipe is primarily a vegetarian dish but for all you meat lovers simply add some minced beef mixed with a little taco seasoning to the refried beans in the first layer.

Serve with a dish of sliced jalapeno peppers those who prefer it hot.
