Italian Stuffed Zucchini Recipe
Ingredients 3/4 small Zucchini (Courgettes) 1lb Beef (minced) 1 medium Onion (finely chopped) 4oz Cooked Rice 2 Tomatoes (chopped) 2oz Parmesan (grated) 4 cloves Garlic (crushed) 2 Eggs (beaten) Breadcrumbs (2 Slices of Bread) 4 teaspoons Dried Oregano Salt and Pepper to season 4oz Mozzarella (grated) Method Preheat the oven 350 degrees. Cut zucchini in half lengthwise and scoop out the flesh leaving shells 1/4 inch thick. Chop the flesh and combine in bowl with the onion, garlic, grated cheese, tomatoes, beef, rice, breadcrumbs, eggs and oregano. Season with salt and pepper. Stuff each zucchini half with the mixture. Put into a greased ovenproof dish, cover cook for 40 minutes. Place a slice of mozzarella on each half and return to the oven, uncovered, for another10 minutes. Serve immediately. Cooks Comments and Tips Depending on how soft you like your zucchini you can reduce or increase the amount of cooking time prior to adding the mozzarella. |
