Italian Stuffed Zucchini 2 Recipe

Recipe for Italian Stuffed Zucchini 2 Recipe

Ingredients

6 small Zucchini (Courgettes)

1lb cooked Minced Beef (drained)

1 jar Marinara Spaghetti Sauce

Breadcrumbs (with 2 slices of bread)

2oz Parmesan Cheese (grated)

2oz Mozzarella (grated)

1 Egg (beaten)

1 teaspoon Oregano

1/4 teaspoon freshly ground Pepper

1/2 teaspoon Salt

Method

Preheat the oven 375degrees.

Cut zucchini in half lengthwise and scoop out the flesh leaving shells 1/4 inch thick.

Chop the flesh and combine in bowl with the grated cheese, marinara sauce, beef, breadcrumbs, eggs, oregano and seasoning.

Stuff each zucchini half with the mixture.

Put into a shallow ovenproof dish, cover cook for 35-45 minutes, until the shells are tender.

Serve immediately.

Cooks Comments and Tips

Although not the traditional italian stuffed zucchini, try replacing the minced beef with minced lamb for a change.
