Italian Summer Squash Or Green Basilico Recipe

Recipe for Italian Summer Squash Or Green Basilico

Ingredients

6 sm. squash (either zucchini or

yellow) or 1 1/2 lbs. green beans

3 tbsp. olive oil or clarified butter

1 tbsp. chopped fresh basil or 1 tsp.

dried

Salt and freshly ground black pepper

to taste

Method

Clean squash and cut into 1/4-inch slices.

Beans can be left whole if small, otherwise they can be cut in half with ends removed.

Heat the oil or butter and add squash or beans, basil and a little salt and pepper.

Cover and cook over a low heat for 5 minutes.

Toss, cover again, and cook another 5 minutes.

Do not cook for more than 10-12 minutes altogether.

Serves 6.
