Italian Bollito Misto Recipe
Ingredients 4 Beets 4 New Potatoes 4 Parsnips (peeled) 4 Carrots (peeled) 4 stalks Broccoli (cut into florets) 1/2 Cabbage (medium) 4 Corgettes (small) 2oz Butter (melted) Fresh Parsley (finely chopped) Squeeze of fresh lemon juice Method Use any selection of the above vegetables. Scrub beets and potatoes, peel carrots and parsnips. Place in vegetable steamer and boil for approximately 20 minutes until tender. Remove from heat and peel beets and potatoes. Remove and discard stalks from broccoli, leaving just the florets. Cut cabbage into quarters and cut corgettes in half. Place broccoli, cabbage and corgettes in vegetable steamer and boil for about 10 minutes until tender. Remove from heat. Cut all vegetables into bite size pieces and serve with melted butter, lemon juice and finely chopped parsley. Cooks Comments and Tips |
