Italian Antipasto Pasta Salad Recipe

recipe for Italian Antipasto Pasta Salad

Ingredients

8oz Penne pasta (cooked  al dente and drained)

250ml  Italian salad dressing

2  Spring Onions (chopped)

1/2 Jar Sweet Roasted Red Peppers

1/2 Jar Artichoke Hearts (quartered)

4oz Cherry Tomatoes

2oz  Pepperoni  (cut into 1/2 inch pieces)

4oz Mozzarella (cubed)

2 tablespoons Parsley (finely chopped)

Method

Toss the pasta with the dressing.

Mix in the onions, tomatoes, peppers, artichoke hearts and parsley.

Marinate in the fridge for at least 2 hours, gently stirring once or twice.

Add cheese and pepperoni before serving.
