Italian Almond Biscotti Recipe
Ingredients 250g Plain Flour 250g Sugar 100g Butter 100g Almonds (toasted and chopped) 3 Eggs (beaten) 1 teaspoon Baking Powder 1 teaspoon Vanilla extract Zest of one lemon A good pinch of Salt Method Preheat the oven to 350 degrees. Grease and flour two baking trays. Cream the butter and sugar, then add the beaten egg. Add the lemon zest and vanilla extract. Combine the flour, baking powder and salt and mix. Finally blend in the toasted almonds. Place the dough onto a lightly floured surface, divide the dough into two, and roll into logs, put the logs onto baking trays and brush with a little milk. Bake in the preheated oven for about 20 minutes, by which time the log should golden brown. Remove from the oven and cool for 10-15 minutes, then cut into 1/2 inch slices. Place on baking tray, cook for 10 minutes. Remove from the oven, turn the slices over and return to the oven for approximately another10 minutes (until the biscuits are firm to touch). Place on a cooling tray. Cooks Comments and Tips When the almond biscotti biscuits are cool store in an air-tight container. |
