Italian Garlic Shrimp Recipe
Ingredients 24 Large Prawns (uncooked, shelled and deveined) 4 cloves Garlic (crushed) 1 glass Dry Vermouth 125mls Olive Oil 1 teaspoon Dried Oregano 2 fresh lemons (juiced) Salt & freshly ground Pepper 4 tablespoons Fresh Parsley (finely chopped) Method Combine the lemon juice, dry vermouth, garlic, oregano, parsley and olive oil in a saucepan and bring to a boil over medium to high heat, stirring frequently. Remove from heat, season with salt & pepper and leave to cool. Arrange prawns in single layer in an ovenproof dish and pour over the vermouth mixture. Refrigerate and leave to marinate for an hour or two. Preheat oven to 375 degrees and bake the prawns, basting once or twice, until pink and translucent, about 15-20 minutes. Serve immediately.
