Italian Calzoni Di Ricotta Recipe
Ingredients 1lb Calzone Dough 2 Eggs (beaten) Oil for frying Filling 8oz Ricotta 4oz Ham (diced) 4oz Provolone (diced) 2 egg yolks Fresh ground Black Pepper Salt Method For the Filling - Mix the ricotta, egg yolks, ham and provolone. Add the salt and pepper to taste. Mix until thoroughly combined. Cut the dough into 4 and roll out to 8 inch circles. Spoon an equal amount of the filling between the four circles, spread to within 1/2 inch of edges. Brush the edges with the beaten egg and fold over. Press firmly to seal edges so that the filling doesn't escape during frying. Arrange on a baking tray and brush with the beaten egg. Deep fry until golden brown. Drain well on paper kitchen roll and serve hot. Cooks Comments and Tips Suitable for freezing. Provolone could be replaced with cream cheese. The calzoni di ricotta recipe may be made in advance and reheated in the oven.
