Recipe for Italian Antipasti Recipe

Ingredients

1 tin Artichoke Hearts (drained and quartered)

1 tin Roasted Red Peppers (drained)

4oz Black  and Green Olives

4oz Sun Dried Tomatoes (drained and sliced)

8oz  Mozzarella  (cubed)

4oz Mushrooms (soaked in herbs and oil)

1 teaspoon Italian seasoning

1 tablespoon Olive Oil

Fresh Basil leaves

Method

Mix the italian seasoning and oil  and leave for 2 hours at room temperature.

Drain the mushrooms, and the arrange with the other vegetables, cheese and olives onto a large serving platter.

Drizzle with the seasoned oil.

Garnish with basil leaves.
