Potato Mint Subzi Recipe

Recipe for Potato Mint Subzi Recipe

Ingredients

4 Potatoes, peeled and boiled

4 tbsp Fresh Mint, finely chopped

4 tbsp Fresh Coriander, finely chopped

1/2 tsp Cumin powder

1/2 tsp Coriander powder

1/4 tsp Chili powder

Salt and pepper to season

2 tbsp Oil

Method

Dice the potatoes and mix with mint leaves, powders, salt, pepper and set aside for 1-2 hours.

Heat oil in a pan, and fry the above mixture on low heat until it becomes golden in colour.

Sprinkle with fresh coriander and serve.

Cooks Comments and Tips

Serve with hot rotis as a vegetarian dish or a a side dish with chicken.
