French Bean Soup Recipe
Ingredients 12oz (338g) Dried white beans, soaked overnight 6 cups water, lukewarm 1 tsp Salt 1 large Onion, studded with 1 Clove garlic 1 Carrot 1 Bay leaf 1/4 tsp Thyme 1/2 stalk celery 1 cup Scalded milk 2 tbsp Butter, cut into pieces 1 pkt. Croutons Method In a large saucepan, combine beans, water, salt, onion, carrot, bay leaf, thyme, and celery. Bring to boil. Cover and simmer for 2 hours, or until beans are very tender. Now discard the carrot, bay leaf, and celery. Drain, reserving liquid. Mash beans. Stir in cooking liquid. Return to pan. Add milk. Heat but do not allow to boil. Take off the heat, add butter, stirring until butter is melted and well blended. Serve hot with croutons. Cooks Comments and Tips . |
