French Sauce Hollandaise Recipe
Ingredients 4oz (113g) Butter 1 tsp Arrowroot 5 tbsp Scalded milk, warm 1 pinch Salt 3 Egg yolks 2 tbsp Lemon juice 1 pinch Ground pepper Method In top of double boiler, combine 1 tbsp butter, arrowroot, milk, salt, and egg yolks. Stir with a whisk until well mixed. Place top over boiling water and whip until mixture thickens. Remove top of double boiler and gradually add remaining butter cut into small pieces, whipping constantly, until smooth and well blended. adjust seasoning. Add lemon juice and pepper.
