French Sauce Bordelaise Recipe
Ingredients 2 tbsp shallots, finely chopped 1/2 cup Red wine 1 pinch Freshly ground pepper 3/4 cup Basic Brown Sauce, * see below 1/2 tsp Lemon juice 1 tbsp Butter, cut in small pieces Method *Recipe for "Basic Brown Sauce" is found in our Sauces and Dressings Section. In small, heavy saucepan, combine shallots (or spring onions), wine, and pepper. Bring to boil and simmer for 10 minutes, or until reduced to approximately 1 tbsp of liquid. Stir in "brown sauce" and simmer for about 10 minutes until reduced to about 1/2 cupand then strain. Off heat, add lemon juice and butter, stirring until well blended. Pour over meat.
