French Basic Bechamel Sauce Recipe
Ingredients 2 tbsp Butter 2 tbsp Onions, chopped 2 tbsp Flour 2 1/2 cups Milk, hot 1/2 tsp Salt 1/4 tsp White pepper 1 pinch Grated nutmeg Method In small, heavy saucepan, melt butter. As soon as butter is melted, add onions and cook over medium heat for 3 minutes, or until onions begin to turn golden. Stir in flour. Stir in milk and cook, stirring constantly until smooth. Add salt, pepper, and nutmeg, and cook over low heat for 30 minutes, stirring occasionally. Strain. This sauce may be prepared in advance. It keeps well refrigerated for up to two weeks.
