French Spinach Au Gratin Recipe
Ingredients 2lb (900g) Spinach 2 tbsp Butter 1/4 tsp Pepper 1/2 tsp Salt 1 pinch Grated nutmeg 1 pinch sugar 1 tsp Flour 1/3 cup Light cream 1/3 cup Sauce Mornay, *see below 1 tbsp Swiss cheese, grated 2 tbsp Butter, melted Method *Recipe for "Sauce Mornay" can be found in our Sauces and Dressings Section. Clean spinach and remove stalks. In a large heavy saucepan melt 1 tbsp butter. Add spinach and cook over brisk heat for 5 minutes, stirring constantly. Remove pan from heat. Add pepper, salt, nutmeg, and sugar. Sprinkle with flour and mix well. Return pan to heat and cook for 2 minutes, stirring constantly. Again remove pan from the heat and stir in the cream.. Return pan to heat and bring to boil, stirring constantly. Lower heat. Cover and simmer for 20 minutes. Off heat, add remaining butter cut into small pieces, stirring until butter is melted and well blended. In bottom of ovenproof dish, spread 3 tbsp of Sauce Mornay. Add spinach. Cover with remaining Sauce Mornay. Sprinkle with grated cheese. Add melted butter. Bake at 500 degrees for 3 minutes, or until the top is golden. Cooks Comments and Tips . |
