Recipe for French Potatoes Lyonnaise Recipe

Ingredients

2lb (900g) Potatoes, boiled and peeled

1/4 cup Butter

1/2 tsp Salt

1/4 tsp Pepper

2 large Onions, thinly sliced

1 tbsp Parsley, finely chopped

Method

Cut potatoes into slices 1/4-inch thick.

In heavy pan, heat 2 tbsp butter.

Add potatoes, salt, and pepper, and cook over medium heat for 20 minutes, shaking potatoes in pan approximately every 5 minutes.

Meanwhile, heat remaining butter in small pan.

Add onions and cook until slightly browned.

Add onions to potatoes.

Mix well and continue cooking for 10 minutes, shaking potato mixture in pan occasionally.

Sprinkle with parsley.

Serve hot.
