French Eggplant Caviar Recipe
Ingredients 1 Aubergine (eggplant) 1/2 tsp Salt 1/4 tsp Pepper 2 tbsp Olive oil 2 tbsp Lemon juice 2 tbsp Finely chopped scallion 2 tbsp Finely chopped parsley 1 Garlic clove, finely chopped Method Bake aubergine (eggplant) whole and unpeeled for 1 hour at 450 degrees. Peel and place aubergine (eggplant) in a bowl. Chop or mash. Add all remaining ingredients. Mix well and chill. Cooks Comments and Tips . |
