French Creamed Spinach Recipe
Ingredients 2lb (900g) Spinach 2 tbsp Butter 1/2 tsp Salt 1/4 tsp Pepper 1 pinch Grated nutmeg 1 pinch sugar 1 tsp Flour 1/3 cup single Cream Method Clean spinach and remove stalks In large, heavy saucepan, melt 1 tbsp butter. Add spinach and cook over brisk heat for 5 minutes, stirring constantly. Remove pan from heat. Add pepper, salt, nutmeg, and sugar. Sprinkle with flour. Mix well. Return pan to heat and cook for 2 minutes, stirring constantly. Again remove pan from heat. Stir in cream. Return pan to heat and bring to boil, stirring constantly. Lower heat. Cover and simmer for 20 minutes. Remove pan from heat. Add remaining butter, cut into small pieces, stirring until butter is melted and well blended. Serve hot. Cooks Comments and Tips . |
