French Spaghetti Salad Recipe
Ingredients 4oz (113g) Spaghetti (broken into 2" pieces), cooked 2 tbsp Dry white wine 1 tbsp Wine vinegar 1 tsp Olive oil 1/4 tsp Salt Pepper 1 Celery stalk, thinly sliced 10oz Frozen artichokes, defrosted and quartered 1/4 cup Mayonnaise 1 tbsp Tomato paste 2 Eggs, hard boiled 2 tbsp Chopped parsley 4oz(113g) Chicken or ham - cooked and chopped Method Keep cooked spaghetti lukewarm. In a bowl combine wine, vinegar, oil, salt, and pepper. Add celery and artichokes. Let stand 1/2 hour, turning occasionally. Meanwhile, mix the mayonnaise and tomato paste. Separate yolks and whites of hard-boiled eggs and chop separately. In a warm bowl mix the spaghetti and mayonnaise. Add artichokes and celery. Toss gently and season. Cooks Comments and Tips . |
