French Chicken Marengo Recipe
Ingredients 3lb (1.35kg) Chicken, quartered 2 tbsp Olive oil 2 medium Onions, chopped 1 tbsp Flour 1/2 cup stock 1/4 cup Dry white wine 3 tbsp Tomato paste 1 Garlic clove, crushed 1/4 tsp Thyme 1 Bay leaf 1/2 tsp Salt 1/4 tsp Pepper 12oz (338g) Mushrooms, sliced 1 tbsp Parsley, chopped 4 slices Fried French Bread Method In a large, heavy pan, cook chicken in heated oil until browned on both sides. Add onions, and cook until onions are slightly browned. Sprinkle with flour, and cook for 3 minutes, stirring constantly. Add stock, wine, tomato paste, garlic, thyme, bay leaf, salt, and pepper. Bring to boil. Cover and simmer gently for 30 minutes, or until meat is tender. Remove chicken to heated serving dish and keep warm. Add mushrooms to pan. Cover and cook over low heat for 15 minutes.
