French Tournedos Morateur Recipe
Ingredients 8 Tournedos, sauteed in butter 8 slices French bread, fried in butter Butter to saute and fry 3 Anchovy filets, chopped 1 tbsp Butter 1 cup Madeira Sauce *see below Method *Recipe for "Madeira Sauce" can be found under our Sauces and Dressings Section To sautee: cook tournedos in heated butter over brisk heat for 4 to 5 minutes each side. salt and pepper to season. Blend together anchovies and 1 tbsp butter. Arrange slices of Fried French Bread on heated serving dish. Remove sauteed tournedos from pan and place one tournedos on each slice of Fried French Bread. Keep warm. To pan in which tournedos have cooked, add Madeira sauce and anchovy mixture. Heat, but do not allow to boil. Pour over tournedos. Serve with fries. Cooks Comments and Tips . |
