Recipe for French Calfs Liver Saute Recipe

Ingredients

1lb (450g) Calf's liver, cut 1/4" thk slices

1/2 tsp Salt

1/4 tsp Pepper

1/4 cup Flour

2 tbsp Butter

1/8 cup Tarragon vinegar

2 tbsp Chopped parsley

1 Lemon, cut into thin slices

Method

Salt and pepper liver.

coat with flour.

In large pan, heat butter.

Add liver, and cook one side for 5 minutes.

Turn, and cook other side for 4 minutes.

Remove liver to heated serving dish and keep warm.

Add vinegar to pan and cook over brisk heat, scraping the bottom of pan until the brown crust is dissolved.

Pour over liver.

Sprinkle liver with parsley and garnish with slices of lemon.

Serve with new potatoes.
